Abstract

DWITA ARMELIA RACHEL. Hygiene and Sanitation on Food Service Management at PMI Hospital Bogor. Supervised by ANNISA RIZKIRIANI.
The implementation to providing food for many people especially hospitals, must be satisfy the principles of hygiene and sanitation to avoid the danger of contaminated food. Hygiene and sanitation efforts are carried out to control matters relating to food production, including technical room, food ingredients, food handlers, and physical facilities that allow the emergence od a disease. Foods that are healthy and safe for consumption are foods that are processed hygienically, cooked perfectly, and pathogenic bacteria are not found. the methods used in data collection among others interview, observation, participated, and hospital environmental health records. Data collections was carried out in the nutrition installation and wastewater treatment plants at PMI hospital Bogor on 6 August 2019 to 30 September 2019. The application of food hygiene and sanitation at nutrition installation PMI Bogor Hospital is done with the principle of personal hygiene especially foor food handlers. Food sanitation is related to the environment and food ingredients. Food processing starts from food that is durable and difficult to process, vegetable dishes are processed at the end of processing. Solid waste treatment in nutrition installation is carried out by separating waste, while liquid waste from nutrition installation is channeled through pipes to the hospital wastewater treatment plant.
